As a professional chef, I’ve picked up a few tips and tricks along the way! Allow me to share them with you on a regular basis!


Cook in stainless steel cookware properly so food doesn’t stick. Instructions: preheat pan dry 1-2 minutes, then add cooking fat one more minute, then add protein) . This creates a stick resistant type barrier without using non-stick cookware.


Don’t wash mushrooms because they absorb the first liquid they are introduced to JUST LIKE SPONGES! So, if you wash them, you’ll end up steaming them instead of getting a beautiful golden color.


Add half oil and butter when you sauté to increase the smoke point of butter so it does not burn. It’s the best of both worlds, high heat with the oil and the flavor of butter!
